This week is National Picnic Week – so why not get out your picnic blanket and hamper and get outside to celebrate.

Potato & Pastrami Salad
This salad can be made the night before and assembled in the morning. The combination of pastrami, potato, dill and a little mustard is wonderful and very sustaining. The salad ingredients and herbs should all feel very soothing.

And for pud…a Carrot Cake
Followed by a delicious crumbly, carrot and almond cake. It doesn’t contain any flour and the sugar content is lower than most cakes as the grated carrots add sweetness.
The almonds, pumpkin seeds, carrots and coconut all provide plenty of dietary fibre and complex carbohydrates which can be broken down by gut bacteria and help to keep the contents of the gut moving.
