Keep cool in the heat!

If the heat is getting to you, why not try out the sorbet recipe below, to help cool you down. Sorbet is a frozen dessert, also known as sherbet or Italian ice. It is the perfect cooling dessert for those who cannot have dairy products or who are lactose intolerant.  It can also be consumed as a low-fat alternative to ice-cream.

 

Mango and Pineapple Sorbet

Serves 4

Ingredients:

1 mango – peeled, stone removed and cubed

115g chopped Pineapple slices

1 teaspoon rose water

125ml water

100g caster sugar

Half a cup of ice

 

Method:

1)      Place the mango, pineapple, rose water, water, caster sugar and ice into a blender. Purée until smooth.

2)      Pour the mixture into a large re-sealable plastic freezer bag. Seal and freeze for 45 minutes to an hour. Making sure to move the contents in the bag every 15 minutes while freezing. This will ensure that large ice crystals are not formed.

3)      To make sure the sorbet is soft when served, take it out the freezer a few minutes early.

Mangoes are a good source of vitamin C and fibre, which helps to reduce cholesterol levels. They also contain vitamin A which is good for the eyes. Pineapples are also a good source of vitamin C and manganese. This can therefore boost the immune system. They also contain a compound called Bromelain that is associated with its anti-inflammatory properties.
