Tomato, mozzarella and avocado salad

This is a far cry from the popular tricolore salad of 1970s Italian restaurants. The slices of red tomato, white mozzarella and green avocado are complemented by the nutritious dried fruits, vitamin C from the kiwi and an extremely high content of protective antioxidants. A salad to turn back your biological clock.

Ingredients
175g (6oz) mixed dried fruits – dates, stoneless prunes, apricots, raisins etc. (snipped)
2 quantities French dressing with seasonal herbs
4 large tomatoes (sliced)
2 kiwi fruit (sliced)
100g (12oz) mozzarella cheese (sliced)
1 avocado (sliced lengthwise)

Method
1. Soak all the fruits in freshly boiled water for 5 mins. Drain thoroughly and stir into the dressing.
2. Arrange the slices of tomato, mozzarella, kiwi fruit and avocado, in that order, on four plates. Pour over the fruit dressing and serve.
